I like to throw the pure bars in every now and then to change things up and to add flavor :) You might read the ingredients below and think she is nuts! However, they taste great. I have been using Brendan’s products for four years now and I do not know how I ever lived without them. I try every now and then to make my own bars and powder, which is cheaper, but time consuming. &lt;p&gt;Ok! I just wrote a great blog about last night and spent a lot of time on it and it just disappeared. I am so mad!  :( Now I am sordof too tired to recreate it. However, if I don’t do it now, I know I won’t return to the topic and it is just too good not to share. &lt;/p&gt;
&lt;p&gt;Last night Amanda and I drove up to SAnta Cruz to meet my new Friend EMily (YAY EMILY) and check out my new school for their culinary demonstration. We unfortunately arrived late and didn’t care to interrupt the presentation, so we decided to head to dinner instead. I had been wanting to try Cafe Gratitude ever since my friend Rachel told me about it and I saw something about it on TV.  Next door to the cafe is a nut store. NUT KREATIONS: A healthy life in a nutshell! It was awesome!!!! I was so excited about it, especially since we were just coming off the detox and the best and most fattening thing you can eat on a detox are NUTS! I think Emily thought I was little bit crazy because I was so happy about mixed nuts. What can I say… I like nuts :)&lt;/p&gt;
&lt;p&gt;Nut Kreations literally had a million different types of raw, roasted, and anything and everything that you can possibly think of and things that you would never think of combined. It was incredible. I sampled a bunch of the nuts, but it would have been impossible to try all of them.  My favorite part about the store is that all of the dark chocolate is VEGAN! I was in Heaven…. dairy free vegan nuts…. YES PLEASE! &lt;/p&gt;
&lt;p&gt;I promise, my body is like a little fake food lie detector. Anytime something that contains dairy, soy, or refined sugar enters my body….. it is like a million buzzards go off sending signals all over, especially to my ankle. HAZZARD, WARNING, we have an intruder. I know it sounds crazy, but sometimes I think I am allergic to these things, but according to tests I am not. So I just choose to not eat them. At this point I think I could even possibly consider going RAW…. maybe… maybe not… haha but at least 85% of the time :) &lt;/p&gt;
&lt;p&gt;Ok Well back to nuts…. The nut store is amazing and you must check it out. http://www.nutkreations.com/ I even tried the tequila pistachios and they were fantastic! &lt;/p&gt;
&lt;p&gt;Afterwards we went to Cafe Gratitude. I was so excited. Also because this was my first “non detox meal.” My first meal eating out of my kitchen in almost 4 weeks. It was so nice to not have to cook and clean my kitchen. Now technically everything I ordered was detox friendly… haha but it was just the fact of the matter. Cafe Gratitude is known for being 100% organic, vegan, and a lot of raw options. I started with a live almond hummus with live flax seed crackers, which was really good! For my main meal I got a kale mixed salad with sesame ginger dressing. Delicious. Then for what I was really looking forward to… DESSERT! Since I didn’t have any sweets on the detox (besides a little agave syrup here and there)… I went all out. I ordered the raw vegan mint chip ice cream and a piece of raw vegan chocolate mouse with coconut crust. Amanda and Emily took a few bites, but for the most part I ate all of it and enjoyed every bite. Any dessert that does not have refined sugar in it is a winner in my book. You can eat it without all of the crazy sugar highs and lows, and without the guilt. Needless to say I left happy and full. The only type of sugar in both of the desserts was agave as well! Amazing right?!?!&lt;/p&gt;
&lt;p&gt;Another fun fact about Cafe Gratitude, is that they have a grateful bowl. Its’ market price is “$7. ” Those who are fortunate are asked to donate / pay more than $7 for their meal. Those who can not afford the $7 can pay however much they can afford. It is a pay it forward method to help those less fortunate. Pretty neat idea, which seems to work out well for them. I highly encourage you to check out the place. Just nice to have healthy vegan options, while dining out. If you would like to try or see any of their recipes, they have a cookbook. I bought &lt;em&gt; I am grateful&lt;/em&gt; at their store and they also sell &lt;em&gt;RAPID RAW&lt;/em&gt;. I will keep you posted on my tasty finds. Ps. Emily ordered the raw Pad Thai, which had sea kelp noodles and tasted skrumptious! Check out their website for more details. &lt;/p&gt;

IT’S OVER

&lt;p&gt;Ok! I have so much to say and not enough time to say it, but I promise to share more tonight. I am done with the detox!!!! Monday was my last day. However, I didn’t eat anything not on the detox until last night… HAHA and my biggest change were roasted nuts and dark chocolate. I have pictures and will share more tonight, but it was exciting. As pathetic as that sounds. &lt;/p&gt;
&lt;p&gt;I did really quickly want to share a raw vegan carrot cake dessert I made this week, which is detox friendly! It was amazing and i am super excited to share this natural sugar raw dessert. &lt;/p&gt;
&lt;p&gt;I found this recipe from Brandon Frazier’s Vega page. The triathlete whose protein powder I am obsessed with! &lt;/p&gt;
&lt;p&gt;&lt;span&gt; &lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Carrot Cake:&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;3 Cups carrot, finely grated&lt;/li&gt;
&lt;li&gt;2 Scoops &lt;a href="http://shop.sequelnaturals.com/Vega-Us/Vega-Nutritional-Products_2/whole_food_health_optimizer-large_chai" title="Vanilla Chai Vega Whole Food Health Optimizer" target="_blank"&gt;Vanilla Chai Vega Whole Food Health Optimizer&lt;/a&gt;&lt;/li&gt;
&lt;li&gt;2 CUP pecans&lt;/li&gt;
&lt;li&gt;1 TSP nutmeg&lt;/li&gt;
&lt;li&gt;1 TSP ginger, ground&lt;/li&gt;
&lt;li&gt;1 TSP cinnamon&lt;/li&gt;
&lt;li&gt;1/2 TSP orange zest&lt;/li&gt;
&lt;li&gt;1/2 CUP coconut, dried and shredded&lt;/li&gt;
&lt;li&gt;1 CUP fresh dates&lt;/li&gt;
&lt;li&gt;1/2 CUP orange juice, freshly squeezed&lt;br/&gt;(1 tsp ground cloves, 1 tsp ground corriander)&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;Vanilla Cashew Icing:&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 1/2 CUP cashews&lt;/li&gt;
&lt;li&gt;1/2 CUP water&lt;/li&gt;
&lt;li&gt;2 TBS agave syrup&lt;/li&gt;
&lt;li&gt;3 TBS coconut oil&lt;/li&gt;
&lt;li&gt;1 TBS vanilla&lt;/li&gt;
&lt;li&gt;1/4 TSP salt&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;Directions:&lt;/strong&gt;&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;Soak cashews and pecans in separate bowls with water for 2-4 hours. Drain, rinse and place the nuts onto separate kitchen towels to gently roll them dry.&lt;/li&gt;
&lt;li&gt;Add dates and orange juice in a food processor and blend into a smooth paste. Set aside.&lt;/li&gt;
&lt;li&gt;Making sure your food processor is dry, add the pecans and chop until crumbed.&lt;/li&gt;
&lt;li&gt;Peel and grate the carrots finely and place in a bowl. Except for the icing ingredients, add everything in with the grated carrots, including the ‘date paste’ and chopped pecans.&lt;/li&gt;
&lt;li&gt;Line a baking tray with greaseproof paper and spread the mixture to about 1 1/2cm in thickness. Cover and chill for hours.&lt;/li&gt;
&lt;li&gt;Vanilla cashew icing, blend all the ‘icing’ ingredients until creamy and smooth. Place in a container and refrigerate for a few hours to thicken up. Keep the icing and cake separate until serving.&lt;/li&gt;

&lt;p&gt;This is one of my favorite new recipes from the past year. It is from Sheryl Crow’s cookbook “If it makes you healthy.” On the detox you will have to make it with Quinoa. Off the detox, I love making it with Quinoa pasta by Ancient harvest. The only reason why you can’t have the quinoa noodles on the detox is bc it contains corn. There is no corn allowed on the detox. Also, the dressing has maple syrup, which isn’t allowed, but if you substitute it for Agave nectar it should taste just as good. Try it out. It is awesome! I just got home from the movie “The Descendants.” I am not going to lie, I was def disappointed! It is the last weekend of my detox. I came home from the movie in instant range for dessert food. I decided to take the leftover warm brown rice, add sliced almonds, raspberries, blueberries, blackberries, and agave nectar. Again, weekends are my pig outs and this is about as bad as I can get with the choices available. Ok, heading to bed, getting up early to train some ladies, and then off to the winery! It is super stormy and windy here this weekend, which is a nice way to end the detox. There is not too much temptation to go out when it is cold and wet.  &lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 bunch of asparagus, tough ends removed, cut into 1” pieces&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 cup diced zucchini&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 cup diced yellow squash&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 medium red onion, diced&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;2 teaspoons garlic powder&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 tablespoon canola oil, preferably expeller-pressed&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;Kosher salt and black pepper&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;2 teaspoons maple syrup&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;2 teaspoons apple cider vinegar&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;½ teaspoon Dijon mustard&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;2 teaspoons chopped fresh basil&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 teaspoon chopped fresh dill&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1 teaspoon chopped fresh tarragon&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;¼ cup olive oil&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;4 cups cooked quinoa (Ancient Harvest’s brand)&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;2 cups loosely packed fresh spinach&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;½ cup roasted red peppers, diced (store bought or homemade)&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;1. Preheat oven to 400 degrees F. Line a large baking sheet with aluminum foil and spray lightly with canola oil.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;2. In a large bowl, toss together the asparagus, zucchini, yellow squash, and onion. Sprinkle with garlic powder and canola oil and toss to coat. Season to taste with salt and pepper.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;3. Spread the vegetables evenly over baking sheet and roast until softened but still firm, 10-12 minutes. Remove from oven and set aside to cool.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;4. Meanwhile, whisk together the maple syrup, vinegar, mustard, basil, dill, and tarragon. Season to taste with salt and pepper and then slowly whisk in olive oil.&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;&lt;span&gt;5. In a large bowl, toss the roasted vegetables with the quinoa, spinach and red peppers. Drizzle the vinaigrette over the salad, tossing to mix thoroughly. Cover the bowl and refrigerate for at least 12 hours before serving. The salad will keep for 2 to 3 days.&lt;/span&gt;&lt;/p&gt;

&lt;p&gt;For todays lunch I made a version of this recipe that I found on Brandon Brazier’s website.  He is a triathlete, who makes the vegan protein powder that I am obsessed with. The recipe below is 2 big servings. For the dressing, I just squeezed an orange and tossed with apple cider vinegar. Delicious!  I am trying to use less olive oil these days, since Joel Fhurman a nutritionist whose book I am reading “EAt to live” is so against more than a teaspoon a serving. Crazy, but understandable! It is extremely fattening, so try to use less olive oil and more vinegar and citrus :)&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Ingredients:&lt;/strong&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 1/2 CUP Fresh chopped tomatoes&lt;/li&gt;
&lt;li&gt;1 CUP Asparagus, chopped&lt;/li&gt;
&lt;li&gt;1 Orange pepper, chopped&lt;/li&gt;
&lt;li&gt;1/2 Head of radicchio&lt;/li&gt;
&lt;li&gt;2 Avacados, chopped&lt;/li&gt;
&lt;li&gt;2 TBSP Lime juice, freshly squeezed&lt;/li&gt;
&lt;li&gt;1/2 CUP Pumpkin seeds&lt;/li&gt;
&lt;li&gt;10 Blackberries&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;Blackberry viaigrette&lt;/strong&gt;:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;10 Blackberries, halved&lt;/li&gt;
&lt;li&gt;1 Minced shallot&lt;/li&gt;
&lt;li&gt;1/3 CUP EFA Antioxidant Oil Blend&lt;/li&gt;
&lt;li&gt;2 TBSP Red wine vinegar&lt;/li&gt;
&lt;li&gt;1 TBSP Organic maple syrup&lt;/li&gt;
&lt;li&gt;1 TBSP Lime juice, freshly squeezed&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;strong&gt;Directions:&lt;/strong&gt;&lt;/p&gt;
&lt;ol&gt;&lt;li&gt;In a large bowl, combine tomatoes, asparagus, orange pepper, radiccio. Toss avacados with lime juice and fold into salad. &lt;/li&gt;
&lt;li&gt;Use a strainer to separate blackberry pulp and seeds from juice. Wisk together blackberry juice, minced shallot, EFA oil, red wine vinegar, maple syrup and lime juice.&lt;/li&gt;
&lt;li&gt;Drizzle desired amount over salad, top with pumpkin seeds and halved blackberries - enjoy!&lt;/li&gt;

Ok so it seems as though I will be MIA on the weekends. I am too busy hoping from one place to the next that I am just exhausted at the end of the day. Too tired to write or think! Saturday after work was nice though a few of us had a bonfire on the beach! lovely!&lt;/p&gt;
&lt;p&gt;Anyway, Sunday after work at the winery, I came home and made some Spaghetti Squash and Acorn Squash. The acorn squash is sweet and was for “dessert.”  The spaghetti squash was the main course. I made a homemade tomato sauce to cover my Spaghetti “noodles”! While it was cooking I watched the golden globe awards and enjoyed my fireplace! Later my weekend munchies were still kicking inn and I wanted something sweet that was detox friendly. I opted for this coconut banana ball with agave nectar and vanilla. Technically the vanilla is sordof cheating, but it is raw and natural! YUM! They are however extremely fattening and rich, so you shouldn’t eat more than one. Don’t worry you won’t be able to, which is the beauty about natural whole foods :) &lt;/p&gt;
&lt;p&gt;Ingredients:&lt;/p&gt;
&lt;p&gt;5 to 8 vine riped tomato’s&lt;/p&gt;
&lt;p&gt;Garlic&lt;/p&gt;
&lt;p&gt;Basil&lt;/p&gt;
&lt;p&gt;Olive oil&lt;/p&gt;
&lt;p&gt;Lentils&lt;/p&gt;
&lt;p&gt;1 to 2 Spaghetti Squash  &amp; Acorn Squash &lt;/p&gt;
&lt;p&gt;(Read directions before going to the store)&lt;/p&gt;
&lt;p&gt;1. First Preheat the even to 375&lt;/p&gt;
&lt;p&gt;2. Cut the squashes in half length wise and clean out all the seeds and goo. &lt;/p&gt;
&lt;p&gt;3. Place them on a pan with 1/2 an inch of water, upside down.&lt;/p&gt;
&lt;p&gt;4. Cook the squash depending on size for 30 to 40 minutes ( I like to choose smaller ones so that they do not take an hour, get 2 small ones if needed)&lt;/p&gt;
&lt;p&gt;Tomato Sauce: (Thank you Chef Vandy Vandkerwaker for teaching me this )&lt;/p&gt;
&lt;p&gt;1. Boil Water on a stove&lt;/p&gt;
&lt;p&gt;2. in a separate small pan, heat up about quarter of a cup of olive oil, place basil and garlic in the oil and infuse (simmer) for 10 minutes… Set aside&lt;/p&gt;
&lt;p&gt;3.  Wash and clean 5 to 8 tomatoes. (8 if your trying to serve about 4 servings and have 2 squashes) Cut x’s on the bottom of the tomato’s for easy peeling later on.&lt;/p&gt;
&lt;p&gt;4. once the water is boiling, drop the tomato’s in for a minute, no longer. &lt;/p&gt;
&lt;p&gt;5. Place the tomato’s in a bowl of ice water. Peel the skins unless you plan to throw them in a blender. &lt;/p&gt;
&lt;p&gt;6. Place the tomato’s in a blender along with the olive oil, garlic, and basil and pulse into the desired consistency. &lt;/p&gt;
&lt;p&gt;7. Once the squash is tender, let cool halfway, then scrap the noodles out of the spaghetti squash, throw sauce on top, along with lentils for protein. (salt and pepper if needed, but not for those detoxers :) &lt;/p&gt;
&lt;p&gt;8. Enjoy some bites of acorn squash for dessert, add cinnamon if desired! &lt;p&gt;DAY 11 of my 21 day detox! Man this is basically flying by… well now that it is the week day. Today I started an ADVANCE BOOT CAMP with KELLEN! HE is the MAN! We had an awesome workout. Non stop hard core cardio for 54 minutes… or however long you took to complete it. It was a doozie. Afterwards, I rushed to Golds Gym to train Lindsey aka LULU one of my new clients! I am super excited to be working with her. She is great. lots of positive energy and determination. I even love that she blogged about our experience today. haha I helped her through the MANLY ROOM :) Check out her post:&lt;/p&gt;

&lt;p&gt;As my quick post work out snack I had juiced a bunch of kale, carrots, apples, ginger, and wheatgrass: to hold me over until lunch, which I put in my LOVE BOTTLE shown above. &lt;/p&gt;
&lt;p&gt;I ate a salad with lentils and chia seeds and the usual in my boss office. He told me to eat while  we had a meeting, so I did. I stunk up the room with onions and apple cider vinegar… he was not very happy. HAHA oh well :) At least it was a healthy stench. After my work was complete at Golds, I came home and made Amanda and Walker’s favorite bean recipe. It is quite delicious and I was craving it. It is from Diana Kennedy’s Mexican cookbook. Make them tonight! One of my favorite things is that you do not have to soak the beans! Sweet, no pre -prep time?!?!? How easy! They do however take a few hours to make, but you just let them be. &lt;p&gt;The key is not stir the beans while they are cooking. Simmer them anywhere from 1 to 3 hours. I was almost at 3 hours. I used shallots instead of onions. I also mixed water with my vegetable stock and of course did not add lard. Use olive oil instead of lard. I did four cups of water and 3 cups of my barefoot contessa stock from last night, which made them even better. To top it off, I placed slice avocado and homemade pico on top. Delicious! Go home and make this tonight! &lt;/p&gt;
&lt;p&gt;Sunday night I made this stock to keep in the fridge for cooking throughout the week. Add all of the ingredients below in a big soup pot with 7 quarts of water. Let it come to a boil, then simmer for 3 hours. You don’t have to peel anything. Leave the skins on! It adds to the flavor. It is easier if you have an All Clad multi pot with mesh insert, so you can strain the veggies out of the stock without a mess.&lt;/p&gt;
&lt;p&gt;When the stock was done last night I drank a few cups of it like tea because it was so yummy. Then tonight I pulled it out of the fridge and added some fresh veggies and the last of my collard greens to it, brought it to a quick boil, and within in minutes I had great tasting soup! On top a threw half a cup of lentils to my bowl and chopped up half an avocado. My body was quite happy. Try it out and let me know what you think. Ok time for my beauty detox rest.
